This wine is inspired by the light semi-carbonic wines of Beujoulais which are very smashable.  The fruit is from the Killick vineyard which is a 40-year-old one acre bush vine vineyard in McLaren Flat.  It is planted on a sand hill with 20m deep sands blown in from the coast over millions of years with Alluvial soils running underneath them. The grapes are handpicked by a local group of friends and the two tractors and driven by the Killick family members including baby Jack who sits in the cab with his dad.

Once picked 10% of a 5T stainless steel fermenter is filled with whole bunches and then topped with whole berries that have been lightly crushed and destemmed. The ferment is then inoculated with EC118 (Champagne yeast) and pumped over 4 times a day for one month. Post ferment the wine is bag pressed and sits in 7-year-old French oak barrels (300L) for 3 months until bottling. This wine is unfiltered and unfined.

The nose is all about dehydrated strawberries and stewed rhubarb intertwined with the fragrance of black peppercorns and delightfully perfumed white peony roses. Raspberries and white strawberries mix with rhubarb on the palate and the fruit is carried by very fine elegant tannins with a lovely spicy finish.
