MOW 2018 Ex-Fino Sherry Butt Cask 397

Fino Sherry is a kind of dry, light-coloured fortified wine from Spain. It is produced from the Palomino grape and matured under a layer of yeast called flor, which prevents it from oxidizing and gives it a nutty, salty taste.

We use Fino Sherry Butts because when they are used to age whisky, they can transfer some of these features to the spirit, as well as pale colour and freshness.

This whisky was aged in cask #397, and it has imparted a rich and complex flavour profile to the spirit.
