Winemakers Julien and Sarah returned to Champagne after many years abroad to establish this house, which they named after their son, Paul. The Composition #6 has seen more oak than the maker’s Monochrome 6 release, giving it a richer, fuller character with brioche and biscuit notes underlying that cool minerality.
