The key to getting it right is a clean, almost Germanic, fermentation. We ferment low and slow and let the malts shine. Last year’s version was not too far removed from a Dunkel but this year the spruce tips are a bigger part of the picture. It’s modern, proudly Scottish and there’s probably not another beer available in the UK today that tastes anything like it.”
